Mexican Pie

So after yesterdays recipe/meals dilemma I decided to revisit an old favourite. This one is my own creation, its basically a Mexican style Lasagne but made with flour tortillas instead of pasta.

What you need:

  • 500g lean steak mince
  • Small amount of olive oil to fry
  • 1 onion
  • 1 tin chopped tomatoes
  • 1 tin kidney beans
  • 1/2 packet of fajita spice mix (or more less to suit your tastes)
  • 3/4 flour tortillas (plain or flavoured)
  • Grated cheese to layer
How to make it:
Set the oven to 200 degrees C
Gently fry the onion with the oil in a large pan until they are translucent, add the mince and fry until brown. Add the tomatoes, kidney beans and the spice mix and simmer for 20 minutes.
Cover the bottom of a large oven dish with some of the mince mixture, cover with one tortilla then sprinkle with grated cheese, Add another layer of mince mix, then tortillas, then cheese and so on. The final layers should be mince mix the cheese for the best result.
Place in the oven for 15minutes until all the cheese is melted and the top starts to crisp.
 Serve with salad, salsa and mexican rice.
